Ingredients

  • 3 1/3 cups unbleached pastry flour
  • 3 large eggs
  • pinch of salt
  • 22 oz milk or water

Instructions

  1. Heat a large pot of water to a boil.
  2. Put flour in a large bowl.
  3. Make a well in the flour center and add beaten eggs.
  4. Slowly whisk in the milk or water, carefully avoiding lumps.
  5. Press dough through a colander or sieve into the boiling water quickly, or shred dough into water off a dish.
  6. Ensure dough is more liquid-like than firm and is tricky to control.
  7. Boil for 5 minutes or until the spätzle rise to the surface of the water.
  8. Use a slotted spoon to transfer the spätzle to a warm serving platter.
  9. Top with cooked chicken.
  10. Serve with sauce on the side.
  11. Serve immediately.
