Ingredients

  • 1 pkg. yeast
  • 2 1/4 tsp. salt
  • 3 1/2 cups unbleached flour
  • 1 1/4 cups water

Instructions

  1. Mix yeast in 1/3 cup of lukewarm water and let it activate.
  2. Combine flour and salt in a large bowl.
  3. Add 1 1/4 cups of water to the yeast mixture.
  4. Pour the yeast mixture into the flour and salt mixture.
  5. Mix well and turn out onto a floured surface.
  6. Knead until the dough is elastic.
  7. Let rise in a bowl until it triples in size, about 4 to 5 hours.
  8. Punch down, fold, and turn the dough, then let rise again for 1 1/2 hours.
  9. Shape the dough into 3-inch balls.
  10. Let the shaped dough rise until 2 1/2 times the original size, about 2 to 2 1/2 hours.
  11. Bake at 450°F (232°C) for 10 minutes until golden brown.
