"Special Rolls"

- Mix yeast in 1/3 cup of lukewarm water and let it activate.
- Combine flour and salt in a large bowl.
- Add 1 1/4 cups of water to the yeast mixture.
- Pour the yeast mixture into the flour and salt mixture.
- Mix well and turn out onto a floured surface.
- Knead until the dough is elastic.
- Let rise in a bowl until it triples in size, about 4 to 5 hours.
- Punch down, fold, and turn the dough, then let rise again for 1 1/2 hours.
- Shape the dough into 3-inch balls.
- Let the shaped dough rise until 2 1/2 times the original size, about 2 to 2 1/2 hours.
- Bake at 450°F (232°C) for 10 minutes until golden brown.
