Spiced Butternut Squash

- Preheat oven to 400 degrees F.
- Mix the ginger, nutmeg, and cinnamon in a small bowl and set aside.
- Peel and seed the squash, then cut into 1-inch pieces. Next, place squash and oil into a large bowl, and coat until well coated. Move squash onto a large baking sheet and spread out in a single layer.
- Sprinkle spice mixture, salt, and brown sugar evenly over the squash. Roast in the oven for 25-30 minutes. You may need to shake or stir the squash halfway through to cook evenly.
