Spiced ham with sweet orange and cinnamon flavors, complemented by tender baked apples, ideal for hearty, comforting meals perfect for family dinners or special occasions.

Ingredients

  • 1 slice gammon (200 g, 1 cm thick)
  • 1 level tsp dry mustard
  • 1/2 to 1 level tsp ground cinnamon
  • 1 to 2 level Tbsp brown sugar
  • 1 small tin orange juice
  • 1 level tsp cornflour

Instructions

  1. Wash the gammon and soak it in cold water for 30 minutes.
  2. Mix dry mustard, ground cinnamon, and brown sugar, then spread the mixture on the gammon.
  3. Place the gammon in a casserole dish with enough orange juice to almost cover it.
  4. Cover the dish and bake until the gammon is tender.
  5. Core the apples but do not peel them.
  6. Cut the apples into quarters and cook gently in the remaining orange juice.
  7. Remove the apples and arrange them on top of the cooked gammon, keeping them hot.
  8. Thicken the cooking juice with blended cornflour to create a sauce.
  9. Serve the sliced gammon with the cooked apples and sauce.
