- Wash the gammon and soak it in cold water for 30 minutes.
- Mix dry mustard, ground cinnamon, and brown sugar, then spread the mixture on the gammon.
- Place the gammon in a casserole dish with enough orange juice to almost cover it.
- Cover the dish and bake until the gammon is tender.
- Core the apples but do not peel them.
- Cut the apples into quarters and cook gently in the remaining orange juice.
- Remove the apples and arrange them on top of the cooked gammon, keeping them hot.
- Thicken the cooking juice with blended cornflour to create a sauce.
- Serve the sliced gammon with the cooked apples and sauce.
