- Secure cinnamon, cardamom and cloves in cheesecloth.
- In a large saucepan, bring spice sachet and remaining ingredients to a boil. Reduce heat and simmer, covered, for 30 mins, or until fruit is soft. Uncover and boil rapidly for 5 mins, or until jam is thick. Discard spice sachet.
