Ingredients

  • 8 cups chopped or coarsely ground peeled pears
  • 4 cups sugar
  • 1 teaspoon cinnamon

Instructions

  1. Combine all ingredients in a large kettle.
  2. Simmer, uncovered, for 1 1/2 to 2 hours, or until thick, stirring occasionally.
  3. Stir more frequently as mixture thickens.
  4. Remove from the heat; skim off foam.
  5. Pour hot into hot jars, leaving 1/4-inch headspace.
  6. Adjust caps and process for 10 minutes in a boiling water bath.
