  1. Preheat oven to 375°F and grease a 2-quart shallow baking dish.
  2. Layer sliced sweet potatoes, 2/3 cup French fried onions, and half of the apple wedges in the prepared dish.
  3. Place the wedges in the baking dish.
  4. In a medium bowl, stir together pineapple with juice, sugar, and cinnamon.
  5. Spoon the pineapple mixture over the sweet potato layer.
  6. Arrange the remaining apple wedges over the pineapple layer.
  7. Bake for 35 minutes or until heated through.
  8. Uncover and sprinkle with the remaining 2/3 cup onions.
  9. Bake for an additional 3 minutes or until the onions are golden.
