Ingredients

  • 2 Tbsp. lard or bacon fat
  • 3/4 lb. onions, thinly sliced
  • 1/2 lb. tomatoes, peeled, seeded and chopped
  • 4 cloves garlic, chopped
  • 1 pkg. (Birds Eye) chili, crushed, but still whole
  • 1/4 tsp. oregano
  • salt and pepper

Instructions

  1. Heat 2 tablespoons of lard or bacon fat in a skillet over medium heat.
  2. Add the thinly sliced onions and cook until tender and translucent, about 5-7 minutes.
  3. Stir in the chopped peeled and seeded tomatoes and cook for another 5 minutes.
  4. Add the chopped garlic and cook for 1-2 minutes until fragrant.
  5. Mix in the crushed chili peppers, oregano, salt, and pepper.
  6. Simmer the sauce for 15-20 minutes, stirring occasionally, until thickened and flavors meld.
