Ingredients

  • 8 slices bacon
  • 4 c. torn spinach leaves
  • 2 hard-cooked eggs
  • 2 medium red tart cooking apples
  • 2 oz. Colby cheese
  • 1/4 c. mayonnaise
  • 2 Tbsp. orange juice

Instructions

  1. In a 10-inch skillet, cook bacon over medium-high heat, stirring occasionally until browned.
  2. Drain off fat.
  3. In a large bowl, combine torn spinach leaves, sliced apples, hard-cooked eggs, Colby cheese, and cooked bacon.
  4. In a small bowl, whisk together mayonnaise and orange juice until smooth.
  5. Pour dressing over the salad and toss gently to combine.
  6. Serve immediately.
