Spinach Lasagna Roll-Ups

Ingredients

  • 12 uncooked lasagna noodles
  • 14 oz. jar spaghetti sauce
  • 8 oz. can mushroom slices
  • 15 oz. container cottage cheese
  • 10 oz. package frozen chopped spinach, thawed and squeezed to drain
  • 1/2 cup shredded Mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat oven to 350°F.
  2. Cook lasagna noodles according to package instructions; drain, rinse with cool water, and pat dry with paper towels.
  3. Lay noodles flat on a cutting board side by side.
  4. In a bowl, combine cottage cheese, thawed chopped spinach, shredded mozzarella, grated Parmesan, and black pepper.
  5. Spread a layer of spaghetti sauce in the bottom of a baking dish.
  6. Lay a noodle flat, spread with spinach and cheese mixture, then roll up.
  7. Place rolled noodles seam-side down in the baking dish.
  8. Repeat with remaining noodles.
  9. Pour remaining spaghetti sauce over the top of the roll-ups.
  10. Sprinkle additional shredded mozzarella and Parmesan if desired.
  11. Cover with foil and bake for 25-30 minutes until heated through and bubbly.
  12. Remove from oven and let stand for a few minutes before serving.
