Ingredients

  • 3 c. flour
  • 1/2 lb. spinach
  • 2 eggs
  • 1/4 tsp. salt

Instructions

  1. Boil and drain spinach well; put through blender.
  2. Make flour into a mound on the table and scoop out a well in the center.
  3. Place strained, blended spinach, eggs, and salt into the well of flour.
  4. Work the mixture into the flour until combined.
  5. Knead thoroughly until smooth.
  6. If necessary, add more flour to achieve the right consistency.
  7. Divide the kneaded dough into 2 parts and roll out each very thin.
  8. Stretch the dough on clean, dry towels.
  9. Let the sheets dry for 1 hour.
  10. Fold each sheet and cut across into lasagne noodles.
  11. Use with your favorite filling or lightly boiled.
