Ingredients

  • 1 lb. ground chuck
  • 1 (6 oz.) can sliced mushrooms
  • 1/2 cup Cheddar cheese, grated
  • Parmesan cheese
  • parsley
  • 1/2 teaspoon pepper
  • 1 can stewed tomatoes
  • 10 oz. package frozen spinach, thawed
  • 1 package noodles Italiano or noodles Romanoff

Instructions

  1. Grease a 2-quart casserole dish.
  2. Brown the ground chuck in a skillet.
  3. Add pepper, sliced mushrooms, stewed tomatoes, and thawed spinach to the beef.
  4. Simmer, covered, for 10 minutes. Remove from heat.
  5. Add uncooked noodles and sauce to the mixture.
  6. Pour the mixture into the prepared casserole dish.
  7. Sprinkle grated Cheddar cheese over the top.
  8. Bake uncovered at 350°F for 25 minutes.
  9. Before serving, garnish with Parmesan cheese and chopped parsley.
  10. May be prepared ahead of time and frozen.
