Spinach Mashed Potatoes

Ingredients

  • 6 to 8 large potatoes
  • 3/4 c. sour cream
  • 1 tsp. sugar
  • 1 stick butter
  • 2 tsp. salt
  • 1/4 tsp. pepper
  • 2 Tbsp. chopped dried chives
  • 1/4 tsp. dill leaves
  • 1 (10 oz.) pkg. spinach, cooked
  • 1 c. shredded Cheddar cheese

Instructions

  1. Cook and mash potatoes.
  2. Add sour cream, sugar, butter, salt and pepper.
  3. Beat with mixer until light and fluffy.
  4. Add chives, dill and drained spinach.
  5. Place in casserole and sprinkle with cheese.
  6. Bake at 400° for 20 minutes.
  7. Delicious!
