Ingredients

  • 3 eggs
  • 1 package frozen chopped spinach
  • 1 pound low-fat cottage cheese
  • 1/4 cup crumbled Feta cheese
  • 8 oz shredded Mozzarella
  • 1 teaspoon dill
  • 1 teaspoon onion flakes
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper

Instructions

  1. Cook the frozen chopped spinach and drain thoroughly.
  2. Combine the cooked spinach, low-fat cottage cheese, crumbled Feta cheese, shredded Mozzarella, beaten eggs, dill, onion flakes, salt, and pepper in a bowl.
  3. Pour the mixture into a nonstick 9 x 9-inch square baking pan.
  4. Bake at 350°F for 35 minutes until golden on top.
  5. Let cool, then cut into squares, wrap, and freeze.
  6. Reheat in a 375°F oven for 10 minutes before serving.
