Ingredients

  • 4 cups instant mashed potato flakes
  • 6 green onions, chopped
  • 1 pint sour cream
  • 2 packages chopped frozen spinach, drained well
  • 3/4 cup grated Cheddar cheese

Instructions

  1. Mix the instant mashed potato flakes, chopped green onions, sour cream, drained chopped frozen spinach, and half of the grated Cheddar cheese in a bowl.
  2. Transfer the mixture to a baking dish and top with the remaining grated Cheddar cheese.
  3. Bake at 350°F for 30 minutes until bubbly and golden on top.
