Ingredients

  • 4 lb. hamburger or turkey burger
  • 2 Tbsp. curing salt
  • 2 Tbsp. whole mustard seed
  • 1 1/2 tsp. garlic salt
  • 1 tsp. cayenne pepper
  • 1 tsp. liquid smoke

Instructions

  1. Mix all ingredients with hands until well combined.
  2. Cover tightly and chill in refrigerator (34° to 38°F) for 3 days.
  3. Each day, remove mixture from container and knead lightly for 5 minutes.
  4. On the fourth day, knead lightly and shape into 4 equal rolls, each 3 inches in diameter. Add 2/3 tablespoon of water if too dry.
  5. Wrap each roll in foil and chill overnight.
  6. Next day, remove foil and place on rack in broiler pan.
  7. Bake at 225°F for 4 hours, turning several times.
  8. Chill slightly after baking.
  9. Wrap in foil and refrigerate for up to 3 weeks or freeze for 2 months.
  10. Serve alone or with cheese and crackers.
