Ingredients

  • 2 lb. navy pea beans
  • 9 c. cold water
  • 3 tsp. dry mustard
  • 5 tsp. salt
  • 1/4 tsp. pepper
  • 1/2 c. molasses
  • 3 Tbsp. vinegar
  • 1/3 c. chili sauce
  • 1 large onion
  • 3/4 lb. salt pork

Instructions

  1. Wash the navy beans and leave them to soak in cold water for 8 hours or overnight.
  2. Bring the soaked beans to a boil and cook until tender.
  3. Mix dry mustard, salt, pepper, molasses, vinegar, and chili sauce in a bowl.
  4. Add the mixture to the cooked beans along with the chopped onion.
  5. Cut the salt pork into slices and scald with hot water.
  6. Drain the salt pork and add it to the beans.
  7. Transfer the mixture to an oven-safe dish and bake at 375°F (190°C) for approximately 4 hours.
  8. Add more boiling water during baking if the beans seem dry.
