- Bring the soaked beans to a boil and cook until tender.
- Mix dry mustard, salt, pepper, molasses, vinegar, and chili sauce in a bowl.
- Add the mixture to the cooked beans along with the chopped onion.
- Cut the salt pork into slices and scald with hot water.
- Drain the salt pork and add it to the beans.
- Transfer the mixture to an oven-safe dish and bake at 375°F (190°C) for approximately 4 hours.
- Add more boiling water during baking if the beans seem dry.
