Sponge Cake Delight

Instructions
- Preheat oven to 300°.
- Grease bottom only of two 8-inch cake pans.
- Beat egg yolks until light lemon colored.
- Add salt, sugar and coffee. Beat well until smooth.
- Slowly add the flour and baking powder.
- Beat egg whites until very stiff.
- Fold carefully into yolk mix until no white shows.
- Divide batter evenly between the two prepared round pans. Smooth out if needed. Bake at 300° for 15 minutes.
- Then raise temperature to 375° and continue baking for 30 minutes.
- Cool slightly.
- Turn out on rack. Place one layer on cake plate.
