Ingredients

  • 8 to 10 cups mixed greens
  • 2 tablespoons finely chopped chives
  • Kosher salt
  • Freshly ground black pepper
  • 2 to 3 tablespoons extra-virgin olive oil

Instructions

  1. Wash and dry the greens, then place them in a large bowl.
  2. Add the finely chopped chives and season with kosher salt and freshly ground black pepper.
  3. Drizzle about 2 tablespoons of extra-virgin olive oil over the greens.
  4. Toss well to coat the greens evenly.
  5. Squeeze the juice of half a lemon over the greens.
  6. Toss again to combine and coat the greens with lemon juice.
  7. Taste and adjust seasoning if needed, then serve immediately.
