Ingredients

  • 2 medium cucumbers
  • 1 medium onion
  • 1/4 green pepper
  • 1 clove garlic
  • 2 c. tomato juice
  • 3 Tbsp. tarragon vinegar
  • salt to taste
  • freshly ground pepper to taste
  • Tabasco sauce to taste
  • 1/2 tsp. dried basil
  • 1/2 tsp. dried chervil
  • 1/2 tsp. dried tarragon
  • 3 Tbsp. chopped parsley
  • 1 Tbsp. chopped chives
  • 3 Tbsp. lemon juice
  • 1 tsp. paprika

Instructions

  1. Peel and dice the tomatoes without losing any juice.
  2. Peel and dice the cucumbers, onion, and green pepper.
  3. Rub a large bowl with the garlic clove.
  4. Add all ingredients to the bowl.
  5. Stir well and chill before serving.
