Ingredients

  • 2 lb. sirloin or tenderloin, cubed
  • 1/2 c. olive oil
  • 1/4 c. lemon juice
  • 1 tsp. salt
  • 1 tsp. marjoram
  • 1 tsp. oregano
  • 1/2 tsp. pepper
  • 1 clove garlic, minced
  • 1/2 c. onion, chopped
  • 1/4 c. parsley, chopped
  • 1 large can mushrooms
  • 2 green peppers
  • 1 jar boiled onions
  • 4 tomatoes

Instructions

  1. Trim fat off the meat.
  2. Combine olive oil, lemon juice, salt, marjoram, oregano, pepper, garlic, onion, and parsley to make the marinade.
  3. Marinate the cubed beef in this mixture for 6 hours, turning often.
  4. Add mushrooms and pepper wedges to the marinating sauce.
  5. Marinate for an additional 2 hours.
  6. When ready to cook, alternate meat, peppers, onions, and tomatoes on skewers.
  7. Broil about 20 minutes, basting often with the marinating sauce. (Alternatively, cook on the outdoor grill.)
