Springtime Fruit Salad

Ingredients

  • 1 fresh pineapple
  • 1 qt. fresh strawberries
  • 1/2 c. fresh blueberries
  • 1/2 c. fresh raspberries
  • 1 (11 oz.) can mandarin orange slices, drained
  • 2 c. orange juice
  • 1 c. sugar
  • 1/4 c. cream sherry
  • 1/2 tsp. almond extract
  • 1/2 tsp. vanilla extract

Instructions

  1. Peel pineapple; cut into chunks.
  2. Combine with remaining fruit in large bowl.
  3. Combine orange juice, sugar, sherry and extracts in bowl.
  4. Mix until sugar dissolves.
  5. Pour over fruit; toss lightly.
  6. Chill for 2 to 3 hours.
  7. Makes 16 servings.
