Squash Waffles

Ingredients

  • 2 cups all-purpose flour
  • 1/4 cup sugar
  • 1 teaspoon salt
  • 1/4 teaspoon cinnamon
  • 3 eggs
  • 1 1/2 cups milk
  • 1/2 cup mashed cooked acorn squash
  • 2 tablespoons melted butter

Instructions

  1. In a bowl, combine the flour, sugar, baking powder, salt and cinnamon.
  2. In another bowl, combine the eggs, milk, squash and butter.
  3. Stir into the dry ingredients just until combined.
  4. Bake in a preheated waffle iron until golden brown.
  5. Serve with maple syrup over top.
