Ingredients

  • 2 squirrels
  • 3 large Irish potatoes
  • 3 large onions
  • 1 large can tomatoes
  • 2 cups fresh tomatoes
  • 1 large can corn

Instructions

  1. Prepare the squirrels by cleaning and boiling them in plenty of water until the meat is tender.
  2. Add chopped onions and large potato pieces to the boiling squirrels and cook for 20 minutes.
  3. Add canned or fresh tomatoes and corn to the mixture.
  4. Season well with salt and pepper, then let the stew simmer until it thickens and the meat falls apart, approximately one to two hours.
