Ingredients

  • 12 cups diced zucchini
  • 4 cups diced onions
  • 1 green pepper
  • 1 red pepper
  • 5 tablespoons salt
  • 2.5 cups vinegar
  • 5 cups sugar
  • 1 tablespoon dry mustard
  • 3/4 teaspoon celery seed
  • 1/2 teaspoon black pepper
  • 3/4 tablespoon cornstarch
  • 3/4 tablespoon turmeric

Instructions

  1. Put vegetables through a food grinder.
  2. Mix with the salt.
  3. Let stand overnight.
  4. Rinse with a cup of water and drain well in a colander.
