Instructions
- Drain syrup from pineapple and add water to make 1/2 cup.
- Heat the mixture to boiling.
- Add lemon Jell-O, stirring until dissolved.
- Add lemon juice, vinegar, and salt; chill until slightly thickened.
- Stir in drained pineapple, shredded carrots, and chopped green pepper.
- Pour into a mold and chill until firm.
- Unmold onto lettuce leaves and serve.
