A colorful, refreshing pineapple salad with tangy lemon Jell-O, crunchy carrots and peppers, perfect for light gatherings or as a vibrant side dish.

Ingredients

  • 1 (13 1/4 oz.) can crushed pineapple
  • 1 (3 oz.) package lemon Jell-O
  • 2 Tbsp. lemon juice
  • 1 Tbsp. vinegar
  • 1/2 cup shredded carrots
  • 1/2 cup chopped green pepper
  • lettuce leaves

Instructions

  1. Drain syrup from pineapple and add water to make 1/2 cup.
  2. Heat the mixture to boiling.
  3. Add lemon Jell-O, stirring until dissolved.
  4. Add lemon juice, vinegar, and salt; chill until slightly thickened.
  5. Stir in drained pineapple, shredded carrots, and chopped green pepper.
  6. Pour into a mold and chill until firm.
  7. Unmold onto lettuce leaves and serve.
