- Chop tomatoes and cube avocado, set aside. Heat olive oil in 12" non-stick skillet. Crack eggs into skillet and fry until done to your preference, transfer to plate. Add spinach and saute until tender, 1-3 minutes. Top fried eggs with spinach, then with tomatoes, avocado and goat cheese. Enjoy!
- NOTE: salt and pepper can be added to taste.
