- Quarter the tomatoes and remove the core and seeds. Dice the flesh into 0.5 cm cubes. Do the same with the red onion, the yellow pepper and the cucumber (leave the skin on the cucumber). Add all to a mixing bowl.
- Crush the garlic and finely chop the chili and coriander and add to the bowl.
- Zest and juice the lime and add to the bowl
- Mix all ingredients together and season generously with the sea salt.
- Cover and refrigerate for at least one hour to allow the flavours to blend.
