Ingredients

  • 12 oz. strawberry gelatin
  • 12 oz. lemon gelatin
  • 4 c. water (cold)
  • 4 c. water (boiling)
  • 1 pt. fresh sliced strawberries

Instructions

  1. Dissolve lemon gelatin in half of the boiling water; add half of the cold water and refrigerate until set.
  2. Before the lemon gelatin sets, fold in whipped cream and sliced strawberries.
  3. Dissolve the strawberry gelatin in the remaining boiling water and add the rest of the cold water.
  4. Pour the strawberry gelatin over the set lemon gelatin in the mold.
  5. Refrigerate overnight until fully set.
  6. Garnish with sugared strawberries and grapes or rosettes of whipped cream before serving.

Tips & Substitutions

For a smoother texture, ensure the whipped cream is gently folded into the lemon gelatin mixture to avoid deflating it. If you're short on time, you can use store-bought whipped topping instead of making your own whipped cream. Fresh strawberries can be substituted with frozen ones, but ensure they are well-drained to prevent excess moisture in the mold.

Serving Suggestions

This Strawberry And Lemon Cream Mold is a delightful centerpiece for summer gatherings. Serve it chilled with a side of whipped cream or a light fruit salad for a refreshing pairing. To elevate the presentation, consider garnishing with fresh mint leaves or serving alongside Irish Soda Bread(From Grandma Bridget Higgins) for a contrasting texture.

Storage & Reheating

Store any leftovers in an airtight container in the refrigerator for up to 3 days. Avoid freezing the mold, as it may alter the texture of the gelatin and whipped cream. If you need to reassemble the dessert for serving, simply slice it into portions and gently lift them out of the mold with a spatula.
