Ingredients

  • 1 lb. package coconut
  • 3 (3 oz.) packages strawberry Jell-O
  • 1/4 lb. almonds
  • 1 can Eagle Brand milk
  • 1 Tbsp. sugar
  • 1/2 tsp. vanilla
  • few drops red food coloring
  • green squeeze frosting

Instructions

  1. Grind coconut and almonds in a blender until fine.
  2. Add 1 1/2 packages of strawberry Jell-O, sugar, Eagle Brand milk, vanilla, and a few drops of red food coloring.
  3. Mix thoroughly and refrigerate for 1 to 2 hours.
  4. Shape into strawberry shapes and roll in remaining dry Jell-O.
  5. Make leaves and berries with green squeeze frosting.

Tips & Substitutions

For a different texture, you can use shredded coconut instead of finely ground coconut. If you're looking for a nut-free option, substitute sunflower seeds for the almonds. Make sure to use unsweetened coconut for balance since the Jell-O adds sweetness. If you want a more intense strawberry flavor, consider adding a splash of strawberry extract.

Serving Suggestions

These Strawberry Chews make an excellent dessert for parties or as a fun snack for kids. They pair beautifully with a glass of Bailey Irish Cream for an adult treat. For a festive touch, serve them on a platter with fresh strawberries or alongside a bowl of Fresh Lemon Poppy Seed Dip for a refreshing contrast.

Storage & Reheating

Store any leftover Strawberry Chews in an airtight container in the refrigerator for up to a week. To maintain their shape, avoid stacking them directly on top of each other. These treats can also be frozen; just make sure to separate them with parchment paper to prevent sticking. Thaw in the refrigerator before serving.

Frequently Asked Questions

Can I use fresh strawberries instead of Jell-O?

While fresh strawberries can add a delightful flavor, they won't provide the same sweetness and texture as Jell-O. If you prefer natural ingredients, consider pureeing fresh strawberries and mixing them with powdered sugar to create a similar sweetness, but the consistency might differ.

What if I want to make these chews vegan?

To make these Strawberry Chews vegan, substitute the Eagle Brand milk with a plant-based condensed milk alternative, such as coconut or almond milk. Ensure that the Jell-O is gelatin-free, as traditional Jell-O uses animal gelatin. There are vegan gelatin substitutes available that can provide similar results.

How can I make these chews more colorful?

In addition to the red food coloring, you can create a variety of colors by using different flavored Jell-O mixes. For instance, adding green Jell-O can give you a vibrant contrast for the leaves. You can also use edible glitter or colored sprinkles for added visual appeal.
