Ingredients

  • 2 Tbsp sugar
  • 1/4 cup water
  • 1 1/2 tsp cherry brandy
  • 2 Tbsp apricot jam or preserves
  • 1/4 tsp strawberry extract
  • 1/8 tsp red food coloring
  • 1 (10 3/4 oz) pound cake
  • 1 pint strawberries
  • 1 1/2 cups heavy cream
  • 2 Tbsp confectioners sugar
  • 1 Tbsp chopped pistachio nuts

Instructions

  1. Combine sugar and water in a saucepan.
  2. Bring to a boil, then cool.
  3. Add cherry brandy to the syrup and set aside.
  4. Heat apricot jam until melted, or force preserves through a sieve if using.
  5. Add strawberry extract and red food coloring to the jam and set aside.
  6. Cut the pound cake horizontally into three even layers.
  7. Wash, dry, and hull the strawberries.
  8. Reserve 6 strawberries and slice the remaining berries.
  9. Whip half of the heavy cream and fold in the sliced berries.
  10. Place the bottom layer of cake on a serving plate.
  11. Brush the cake with cherry brandy syrup.
  12. Spread half of the berries-cream mixture on the cake and top with the second cake layer.
  13. Brush the second layer with remaining syrup.
  14. Add the final cake layer and brush with remaining syrup.
  15. Beat the remaining heavy cream with confectioners sugar until stiff peaks form.
  16. Serve the assembled cake topped with whipped cream and chopped pistachios.
