Ingredients

  • 3 cups water
  • 2 cups milk
  • 3/4 cup uncooked rice
  • 3/4 teaspoon salt
  • dash of cinnamon
  • 3 envelopes unflavored gelatin
  • 3/4 cup sugar
  • 2 teaspoons vanilla
  • 1 cup heavy cream

Instructions

  1. Combine water, milk, rice, salt, and cinnamon in a double boiler. Cover and cook over simmering water for 40 minutes or until rice is tender. Stir occasionally.
  2. Mix gelatin and sugar; stir into rice until gelatin dissolves.
  3. Pour into a large bowl; cool.
  4. Add vanilla. Chill until slightly thickened.
  5. Fold in whipped cream.
  6. Turn into an 8-cup ring mold.
  7. Chill until firm.
  8. Unmold and serve.
