Delightful stuffed muffins feature a tender batter filled with preserves or fruit, offering a sweet, portable treat perfect for breakfast, snack, or brunch gatherings.

Ingredients

  • 1 cup flour
  • 2 Tbsp sugar
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 egg
  • 1/2 cup milk
  • 2 Tbsp salad oil

Instructions

  1. Spray muffin tins with nonstick coating.
  2. Beat the egg 15 strokes, then add the beaten egg to the batter.
  3. Mix flour, sugar, baking powder, and salt in a bowl.
  4. Add milk and salad oil to the dry ingredients and mix until just combined.
  5. Fill each muffin cup halfway with batter.
  6. Place a teaspoonful of preserves, jelly, or apple slices on top of the batter in each cup.
  7. Add a small amount of butter on top of the preserves if desired.
  8. Spoon remaining batter over the filling, covering it.
  9. Bake at 350°F (175°C) for 12 minutes or until golden.
