Stuffed new potatoes are a delightful appetizer or side dish featuring tender, bite-sized potatoes filled with a creamy, cheesy chive mixture. Perfect for gatherings or family dinners, they combine comforting flavors with a touch of elegance, offering a satisfying bite of savory goodness.

Ingredients

  • 20 small new potatoes
  • 3/4 cup grated cheddar cheese
  • 1 cup cream cheese
  • 1/2 cup sour cream
  • 3 tablespoons chopped chives
  • 1/4 teaspoon salt

Instructions

  1. Boil the small new potatoes until soft, then cool them in the fridge.
  2. Combine the grated cheddar cheese, cream cheese, sour cream, chopped chives, salt, and pepper in a bowl.
  3. Cut the cooled potatoes in half.
  4. Use a melon scoop or small spoon to scoop out a small portion of potato from each half and discard.
  5. Spoon about a tablespoon of the cheese mixture into each potato half.
  6. Bake the stuffed potatoes at 375°F for 15-20 minutes until heated through and slightly browned.
  7. Serve immediately. Any leftover mixture can be stored in the fridge.
  8. These stuffed potatoes are also great on top of a baked potato.
