Ingredients

  • 1 pound fresh Brussels sprouts
  • 1 cup chopped celery
  • 2 Tbsp. butter
  • 2 Tbsp. all-purpose flour
  • 1 cup milk
  • 1/2 cup shredded processed American cheese
  • 1/4 tsp. salt
  • pinch cayenne pepper

Instructions

  1. Place Brussels sprouts, chopped celery, and a small amount of water in a saucepan; cover and cook for 8 minutes or until crisp-tender.
  2. Meanwhile, in another saucepan, melt the butter over medium heat.
  3. Stir in the flour until smooth and well combined.
  4. Gradually add the milk, stirring constantly, and bring to a boil.
  5. Reduce heat and cook, stirring for 2 minutes or until the sauce is thickened.
  6. Add shredded American cheese, salt, and cayenne pepper if desired; stir until the cheese is melted and the sauce is smooth.
  7. Drain the cooked Brussels sprouts and celery.
  8. Top with the cheese sauce and serve hot.
