Ingredients

  • 4 cooked Polish sausage links
  • 1 cup instant mashed potatoes
  • 2 tablespoons green onion
  • 1/2 cup Cheddar cheese

Instructions

  1. Split sausage links lengthwise, making a pocket.
  2. Place the sausage links in a baking pan.
  3. Prepare instant mashed potatoes according to package instructions, omitting the salt and reducing liquid by 2 tablespoons.
  4. Stir in chopped green onion into the mashed potatoes.
  5. Spoon the mashed potato mixture into the sausage pockets.
  6. Bake uncovered at 350°F (175°C) for 25 to 30 minutes.
  7. Top the sausage with shredded Cheddar cheese.
  8. Bake until the cheese melts and is bubbly.
