Ingredients

  • 5 lb. medium sized squids
  • 2 medium onions, chopped fine
  • 2 Tbsp. chopped mint leaves
  • 1/2 c. rice
  • 3/4 c. olive oil
  • 2 Tbsp. tomato paste
  • 1 c. canned tomatoes
  • 1/4 c. water
  • salt

Instructions

  1. Remove ink sac and bones from squids.
  2. Wash squids thoroughly.
  3. Remove head and entrails from the body.
  4. Cut feelers from head and chop very fine together with entrails.
  5. Place chopped feelers and entrails in a bowl.
  6. Add rice, 1/2 cup olive oil, chopped mint leaves, tomato paste, canned tomatoes, salt, and pepper; mix well.
  7. Stuff the squids with the mixture and replace the heads to keep the filling inside.
  8. Arrange stuffed squids in a baking dish and pour remaining juice from filling over them.
  9. Add remaining olive oil and water to the dish.
  10. Bake in a hot oven at 475°F (246°C) for 20 minutes.
  11. Reduce oven temperature to 375°F (190°C) and bake for an additional 30 minutes or until rice is tender.
  12. Baste the squids occasionally during baking.
  13. Serve very hot.
