Summer Day Soup
Ingredients
- 4 cups vegetable juice, chilled ⓘ
- 2 cups chopped tomato ⓘ
- 1 1/2 cups chopped sweet onion ⓘ
- 1 1/2 cups chopped seeded peeled cucumber ⓘ
- 1 cup chopped bell pepper ⓘ
- 1/4 cup finely chopped fresh parsley ⓘ
- 2 tablespoons fresh lime juice ⓘ
- 2 tablespoons fresh lemon juice
- 2 tablespoons tarragon vinegar ⓘ
- 1 tablespoon extravirgin olive oil ⓘ
- 1 teaspoon dried basil ⓘ
- 1 teaspoon honey ⓘ
- 1/2 teaspoon dried tarragon ⓘ
- 1/4 teaspoon ground cumin ⓘ
- 1/4 teaspoon dried oregano
- 2 garlic cloves, minced ⓘ
Instructions
- Combine all ingredients in a large bowl. Place 4 cups vegetable mixture in a blender or food processor, and process until smooth. Return pureed vegetable mixture to bowl, stirring to combine. Cover and chill.
