Ingredients

  • 6 cups fresh corn cut from cob (about 12 ears)
  • 1 1/2 cups water
  • 1/2 cup chopped green onions
  • 1/4 cup chopped green pepper
  • 2 Tablespoons chopped fresh basil
  • 2 Tablespoons white wine vinegar
  • 1/2 teaspoon sugar
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground white pepper
  • 1/4 teaspoon hot sauce

Instructions

  1. 1) Combine first 4 ingredients in a medium saucepan. Bring to a boil; reduce heat, and simmer, uncovered, 20 minutes.
  2. 2) Add chopped basil and next 5 ingredients; cook 10 minutes or until corn is tender. Transfer
  3. to a serving bowl; serve with a slotted spoon. Garnish with basil sprigs, if desired.
