Ingredients

  • 20 oz. can pineapple tidbits
  • 1/2 lb. shredded carrots
  • 1/2 lb. shredded cabbage
  • 1/2 cup sunflower seeds, toasted
  • 1/2 cup mayonnaise
  • 2 tablespoons frozen orange juice concentrate
  • 1/4 teaspoon salt
  • pinch of white pepper

Instructions

  1. Drain pineapple; reserve 2 tablespoons of juice.
  2. Combine pineapple with cabbage, carrots, and toasted sunflower seeds in a large bowl.
  3. In a separate small bowl, stir together mayonnaise, frozen orange juice concentrate, reserved pineapple juice, salt, and white pepper.
  4. Pour the dressing over the salad mixture and toss to combine.
  5. Chill the slaw before serving.
