Ingredients

  • 7 or 8 medium carrots
  • 1 Tbsp. sugar
  • 1 tsp. cornstarch
  • 1/4 tsp. ground ginger
  • 1/4 c. orange juice
  • 2 Tbsp. butter

Instructions

  1. Bias-slice carrots crosswise about 1/2-inch thick.
  2. Cook.
  3. In a small saucepan, combine sugar, cornstarch, ginger and 1/4 teaspoon salt.
  4. Add orange juice.
  5. Cook, stirring constantly, until thickened and bubbly.
  6. Boil 1 minute.
  7. Remove from heat. Stir in butter.
  8. Pour over hot carrots; toss to coat evenly.
