Ingredients

  • 5 eggs
  • 1 tablespoon milk
  • salt and pepper
  • 2 tablespoons butter or 2 tablespoons margarine
  • 6 cherry tomatoes, sliced
  • 1 small red pepper, cut into strips (or green pepper)
  • 14 cup black olives, sliced
  • 12 cup cheddar cheese or 12 cup mozzarella cheese, sliced
  • 2 teaspoons fresh parsley, chopped
  • ketchup

Instructions

  1. Whisk together eggs, milk salt and pepper to taste.
  2. Melt butter or margarine in a 10-inch skillet, over medium-low heat.
  3. Pour in egg mixture; cover and cook, without stirring, for 5-10 minutes or until just set.
  4. Slide omelette out onto a cutting board; let cool for a few minutes.
  5. Meanwhile, place tomatoes, red or green pepper, olives, cheese and parsley in separate bowls.
  6. Using a large round cookie cutter, cut 4 "faces" out of the omelette.
  7. Decorate egg faces using the veggies, cheese and ketchup.
