Sunshine Noodles are homemade, delicate egg noodles with a light, tender texture, perfect for pairing with butter or broth, ideal for comforting and versatile meals.

Ingredients

  • 1 1/2 cups flour
  • 1/2 teaspoon salt
  • 2 egg yolks
  • 1/4 cup water

Instructions

  1. Sift flour and salt together.
  2. Mix egg yolks and water; add to flour mixture.
  3. Mix well.
  4. Knead dough on a lightly floured board until smooth.
  5. Divide dough into 4 parts; roll each part separately until paper thin.
  6. Let sheets of dough stand until partially dry.
  7. Cut into narrow or broad strips.
  8. Separate noodles and let dry for another 30 minutes or longer.
  9. Store in a dry container in a cool, dry place.
  10. Drop noodles into boiling, salted water.
  11. Cook for 10 to 15 minutes.
  12. Drain the noodles.
  13. Put in a hot serving dish.
  14. Dress with melted butter or broth of your choice.
