Ingredients

  • 20 oz. can crushed pineapple
  • 1 cup sugar
  • lemon cake mix

Instructions

  1. Boil the crushed pineapple and sugar for 5 minutes; then cool.
  2. Bake the lemon cake according to the package directions.
  3. While the cake is still hot, spread the cooked pineapple on top of it.
  4. Sprinkle the instant pudding mix on top of the pineapple layer, using it dry.
  5. Cover the cake with Cool Whip.
  6. Sprinkle with pecans and shredded coconut.
  7. Serve and enjoy.
