Ingredients

  • 3 to 4 lb. chuck roast
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 2 Tbsp. oil
  • 4 Tbsp. flour
  • 1 chopped onion
  • 1 chopped green pepper
  • 1 (No. 303) can tomatoes
  • 2 medium potatoes, diced
  • 3 Tbsp. vinegar
  • 2 Tbsp. sugar

Instructions

  1. Cover the chuck roast with water, adding 1 teaspoon of salt and 1/2 teaspoon of pepper.
  2. Simmer until tender, about 2 hours.
  3. Remove the meat from the broth.
  4. Save the broth for later use.
