Super Salmon Bake

Ingredients

  • 1 1/2 c. milk
  • 1 slice bread
  • 4 Tbsp. butter
  • 2 eggs
  • 1/2 tsp. salt
  • pepper
  • 1 Tbsp. minced onion
  • 2 c. salmon (if canned, use the juice also)

Instructions

  1. Bring water to boil in bottom of double boiler.
  2. In top of boiler, put milk, bread and butter.
  3. Then heat until creamy.
  4. Beat eggs; add the salmon, salt, pepper and onion.
  5. Add hot milk mixture; stir well.
  6. Put in greased baking dish; bake uncovered for 1 hour at 350°.
  7. Serves six.
