Super Simple, Crisp Waffles

Ingredients

  • 1 5/16 cups milk
  • 3 7/8 tablespoons butter
  • 1 5/8 cups all purpose flour
  • 1 teaspoon baking powder
  • 1 pinch sea salt
  • 1 tablespoon brown sugar
  • 1 teaspoon active dry yeast
  • 1 egg

Instructions

  1. Set a saucepan over a low heat. Add the milk and butter. Cook until the milk becomes lukewarm. The temperature should not go over 38°C / 100°F or it will kill the yeast.
  2. Combine the flour, baking powder, sea salt, brown sugar and yeast in a bowl. Pour over the lukewarm milk and butter mixture. Stir well. Add the egg and stir again. Set aside for at least 15 minutes or up to 6 hours on a room temperature. Preheat the waffle iron. You can make the waffle mixture one day ahead, cover with a plastic wrap and leave overnight in a refrigerator.
  3. Serve these lovely crisp waffles with seasonal fruit and a dollop of greek yogurt. Or serve with your favorite syrup, honey, caramel or chocolate.
