Survival Chili
Ingredients
- 2 Tbsp. salad oil
- 2 1/2 lb. boneless lean beef chuck, cut in 1/2-inch cubes ⓘ
- 1 (12 oz.) can beer ⓘ
- 1 1/2 c. water ⓘ
- 1 (8 oz.) can whole tomatoes, crushed ⓘ
- 1 (8 oz.) can tomato sauce ⓘ
- 1 (4 oz.) can mild green chiles, chopped (undrained) ⓘ
- 1/2 c. chopped green pepper ⓘ
- 1/4 c. instant minced onion ⓘ
- 1 1/2 tsp. ground cumin ⓘ
- 1 tsp. salt ⓘ
- 1/3 tsp. oregano leaves, crushed ⓘ
- 1/2 tsp. instant minced garlic ⓘ
- 1/2 tsp. paprika ⓘ
- 1/2 tsp. cilantro ⓘ
- 1/2 tsp. ground black pepper ⓘ
- 1/16 tsp. ground red pepper ⓘ
- 4 tsp. chili powder ⓘ
Instructions
- In a large pot, heat oil until hot.
- Add half of the meat; brown well on all sides.
- Remove with slotted spoon.
- Add remaining meat and brown.
- Return all meat to pot.
- Add remaining ingredients and bring to a boil.
- Reduce heat and simmer, covered, stirring occasionally and adding more water if needed, for 3 hours.
- Makes about 7 cups.
