Ingredients

  • 4 whole cardamom pods
  • 1/4 cup broken cinnamon sticks
  • 25 whole cloves
  • Peel of 1 orange
  • 2 quarts Port
  • 2 quarts Burgundy
  • 1 1/2 cups raisins
  • 1 cup whole blanched almonds

Instructions

  1. Remove seeds from the cardamom pods (should have 20 to 25 seeds) and tie with cinnamon sticks, cloves, and orange peel in a cheesecloth bag.
  2. In a large saucepan, combine half the Port, half the Burgundy, and the raisins; add the cheesecloth bag.
  3. Simmer, covered, for 15 to 20 minutes.
  4. Add the remaining wine and the almonds; heat through.
  5. Place sugar in another saucepan.
  6. Warm about a third of the brandy; pour over the sugar and light with a match to flame.
  7. When the sugar has melted, extinguish the flame by pouring in the remaining brandy.
  8. Add the sugar mixture to the wine mixture.
  9. Serve warm.
  10. Float halved orange slices studded with whole cloves in each cup, if desired.
