  • 3 oz. soft brown sugar

  • 8 oz. plain flour
  • 1 tsp. bicarbonate of soda

Instructions

  1. Put dried fruit, margarine, sugar, mixed spice, and water in a saucepan. Bring to a boil.
  2. Boil for 3 minutes.
  3. Allow to cool.
  4. Add plain flour, bicarbonate of soda, and salt to the mixture.
  5. Beat well until combined.
  6. Pour into a greased and lined 6-inch cake tin.
  7. Bake at 350°F (175°C) for 1 hour.
